The activity will take place at the Giannavi Farm, in the heart of iblei, in Palazzolo Acreide, a UNESCO World Heritage site. The day at the farm will begin with the farmer’s breakfast, with warm ricotta, fresh cheese, dried sausage, seasoned olives and freshly baked homemade bread seasoned with olive oil, salt and oregano.Then we will proceed with the olive harvest, which in October is now coming to an end. Then atree will be preserved specifically for guests, who will try to harvest the fruits, green and rich in juice, which once pressed will give rise to an excellent extra virgin olive oil.For the pressing of the olives we will move to the oil mill in the area, the one of the “Carpino” brothers. There the guests will be able to watch the whole procedure to which the olives are subjected before being pressed, the selection, the removal of the leaves and then the milling that will give rise to the extra virgin olive oil. At the time of oil extraction we will proceed to the tasting of the same, on the bread or inside appended containers for the tasting of the oil, which will exalt the smells and the taste of the oil to the tasting. At the end of this operation we will return to the nearby Giannavì farm for a light lunch based on local products, all made on the farm.After lunch, guests will be offered a cooking class on local pastries, at the historic pastry shop of Palazzolo Acreide, with the pastry chef Giuseppe Infantino, winner of many awards, in many national competitions, Infantino will host us at the laboratories of his pastry shop, in the historic center of the town, and will give life with the contribution of the local chef, Alessia to a lexion of cooking on the realization of the Sicilian cannoli, of the almond biscuits, of the fried ricotta ravioli or of other typical little docettas of the season.
